Another favourite vegetarian dish is aubergine curry or Indian curry with aubergine (yes Indian curry, not Thai curry) . There are a number of ways to create this dish which centre around the way in which you prepare your aubergine. The first way is to fry the aubergine separately, and the second is to cook the veg with the other ingredients (without pre-frying it). Additionally you can prepare this as a dry curry or if you prefer, a more watery curry which is best eaten with rice.
Today we just had the dry non-fried version of this dish for dinner, which comprises of potatoes and aubergine as the primary ingredients, and you can see the picture of it still in the frying pan below … Can you smell that? Yummm!
